This, my friends, is my comfort food. It’s quick, it’s easy, it’s scrumptious, what more can you ask for? Everybody I’ve ever served this to has raved over it. There are rarely leftovers. (It tends to depend on how much I make)

I grew up with this glorious meal and continue to tweak and play with the recipe just about every time I make it, which is at least a couple times a month. This is the base recipe to which you are encouraged to add whatever it is your family fancies! Often times I use all one type of bean, like pinto or black beans, that I’ve cooked in the crock-pot all day. I prefer to use different  colored beans though as it makes for a very pretty presentation.

Sausage Beans and Rice

Yield: 4 servings

Time: 30 minutes

Ingredients:

  • 2 Cups Cooked Rice
  • 1 Tablespoon Oil
  • 1 lb Sausage, Keilbasa is our favorite, cut into half circle discs
  • 1/2 Cup Finely Diced Onion
  • 1/2 Cup Diced Green Bell Pepper
  • 1-3 Cloves Garlic, minced
  • 1 Can Kidney Beans, un-drained
  • 1 Can Navy Beans, drained a bit but not rinsed
  • 1 Can Black Beans, drained and rinsed
  • Salt to Taste
  • Pepper to Taste
  • 1 Teaspoons Mrs. Dash Extra Spicy or Cajun Seasoning of your choice
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Onion Powder

Directions:

  1. Sautee onion, garlic and pepper over medium high heat until translucent and tender.
  2. Add sausage and stir well. Brown it a bit.
  3. Add your beans and spices, stir well, and bring to a boil.
  4. Once it’s at a boil, reduce heat to low and simmer, partially covered, for 18 minutes.
  5. Serve over cooked rice and enjoy!

Notes:

You might enjoy some hot sauce added in at the last minute or maybe even some more spice.

The beans are not set in stone! Use whatever you have in your pantry, it’s equally delicious.
