Happy Monday everyone! The menu for this week is going to be adventurous for us. I’m going to attempt curry for the first time and I’m excited and a little nervous at the same time. Wish me luck!
Having to have at least two servings of baked dairy a week in Joshua’s diet is proving to be more of a challenge that I thought. It seems that casserole type things aren’t working very well. I have some theories as to how and why, so we’ll just have to see. Experimenting is nerve wracking to say the least.
Dinners will be:
- Sloppy Joes, Broccoli, Baked Beans
- Curried Coconut Chicken, Rice, Veggies
- Pizza!!!! Squee! (Baked Dairy 1)
- BBQ Chicken Thighs, Mashed Potatoes, Peas
- Soft Tacos, Refried Beans, Tomatoes, Shredded Lettuce, Salsa
- Beef Pie
- Sausage Beans & Rice
Lunches will be:
- Sandwiches
- Leftovers
Breakfasts will be:
- Hearty Ham Breakfast Skillet
- Scones
- Oatmeal
- Toasted Bagels
Dairy 2
- Brownies with Hershey’s Chocolate Chips on top.

Have you made dairy free curry before? If you have any tips for a newbie like me, they would be very welcome!


We make curry a lot, simply find a dairy-free and everything else free curry paste (usually they’re good). Not sure what types you have overseas though. Simply fry until fragrant, add your meat (usually chicken here) seal, add coconut milk or cream and simmer, at veggies near the end to cook in the liquid. Serve over rice or rice noodles.
So glad to have you Marisa! We have one of those off the charts food allergic kiddos too. I hope you can find some recipes that will work for your family here
Just found your blog! We have 5 kiddos and one has severe food allergies, doc’s never saw one so bad, and it is always a challenge cooking for all of us! Can’t wait to try your recipes!

We LOVE curry. The big thing we do is use canned coconut milk (full fat, not light) in the curry. Makes it creamy! I have a Coconut Mango Curry on my blog under the recipe tab under Chicken & Turkey. (I won’t leave the link so your blog won’t think I am a spam girl! LOL)
