Last week was sooo very amazing. My husband and I spent the weekend and Monday and Tuesday in New York City! I was graciously invited to the Mylan Food Allergy Summit that took place Monday night and Tuesday. The amazing women that attended and spoke made me feel like I was in the presence of food allergy blogger royalty. Seriously, I was totally starstruck y’all. New York City is a big place for this small town Texas girl. Speaking at the Summit were Dr. Ruchi Gupta, an amazing champion of food allergy research and care, author of the newly released The Food Allergy Experience, and mother of a lovely little lady with food allergies. and Sloan Miller, aka Allergic Girl who writes over on her blog Please Don’t Pass the Nuts and is the author of Allergic Girl. It was so very awe inspiring to listen to these ladies speak to us about how to live confidently with food allergies and what’s going on behind the scenes in food allergy research.

There is much to come from the summit on my end. I took lots of notes and have all sorts of tips to share with you in the coming days.
We had an amazing trip but now it’s time to hop back into regular daily life and I have to say I’m glad 🙂
That means that a menu plan is in order!
I’ll list our food and then Maya’s food so you can get an idea of exactly what it is we’re eating nowadays.
Meal Plan Week of February 4, 2013
- Chili, Salad
- Red Beans, Sausage and Rice, Salad
- Chicken Cutlets, Roasted Cauliflower and Baked Beans, Salad
- Tacos with Fixings, Salad
- Pork Chops, Mashed Potatoes, Steamed Broccoli, Salad
- Protein Shakes for me (P90X!)
- Cereal with Fruit
- PB&J’s with Veggie Chips
- Spaghetti leftovers
Maya Breakfasts (all with an Elecare shake)
- Toast w/Honey
- Rice Cereal w/Rice Milk
- Smoothies (already have Elecare in them)
Lunches (all plus a splash)
- Boiled Baby Potatoes
- Salad w/Sweet Potato Chips
- Mashed Sweet Potato
- Salad with Rice Crackers
- Potato of some sort
Dinners (all plus an Elecare shake)
- Kale Chips and Rice
- Potato Medallions
- Sauteed Cabbage with Rice
- Collard Greens with Rice
Snacks are an experiment this week with trail mix and muffins that are safe for everybody. We’ll see how that goes and I’ll share the successes with you 🙂
